Black Bean Chili

2 c. dried black beans or 6 c. cooked
1 T. vegetable oil
2 T. dehydrated onions
2 tsp. miced garlic
1 lb. ground beef or turkey
1 can crushed tomatoes
1 1/2 T. chili powder
1 T. oregano
1 T. basil
1 T. red wine vinegar

1. Rinse and sort beans. Cover beans in 4" of water above beans overnight.
2. Discard water. Boil beans with 10 c. of water. Reduce beans and simmer 2-3 hrs. or until tender. Discard water again.
3. Heat the oil in a large heavy pot over medium heat; cook onion and garlic until onions are translucent. Add turkey or beef and cook, stirring, until meat is brown. Stir in beans, tomatoes, chili powder, oregano, basil and vinegar. Reduce heat to low, cover and simmer 60 minutes or more, until flavors are well blended.
