
3 c. warm water
1/3 c. canola oil
1/3 c. honey
1 Tbsp. SAF instant yeast
1 1/2 Tbsp. dough enhancer
1 1/2 Tbsp. vital wheat gluten
1 Tbsp. Lecethin
1 Tbsp. milk (or powdered milk)
1 Tbsp. salt
5-7 c. freshly milled whole wheat flour
Pour warm water into mixing bow. Add oil honey, and yeast.
Add enough flour (2-3 c.) to cover the oil, honey and yeast.
These ingredients will cool the water appropriately
Add dough enhancer, vital wheat gluten, lecethin, milk and salt.
Add 2 c. of fresh milled wheat flour on top of liquid. Mix well.
On speed 1 on your machine, continue to add wheat flour, only until the dough begins to pull away (clean itself) from the bottom of the bowl.
Do NOT add too much flour!
Knead dough in mixer for 10 min.
Oil or grease cutting board and hands Remove dough from bow onto countertop or cutting board and divide into 4 equal portions. Shape into loaves and put into well greased pans immediately. Cover with a lightweight towel and let the loaves rise until they are double in size, about 30-60 min.
Bake in preheated oven at 350 degrees for 30-35 min. or until golden brown. Remove from pas when done and cool on a wire rack. Rub tops of hot bread with butter.
